- ¼ teaspoon black pepper
- ¾ cup panko breadcrumbs (for coating)
- 2 tablespoons olive oil (for brushing)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the sweet potatoes: Bake or boil sweet potatoes until soft, then mash them in a bowl.
- Mix the ingredients: Add grated parmesan, flour, egg, garlic powder, paprika, salt, and black pepper to the mashed sweet potatoes. Stir well to form a dough-like consistency.
- Shape the puffs: Using your hands, roll the mixture into small bite-sized balls.
- Coat the puffs: Roll each ball in panko breadcrumbs until fully coated.
- Arrange and bake: Place coated puffs onto the baking sheet and lightly brush with olive oil.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
