- 5–6 fresh curry leaves
- 2 cloves garlic (minced)

Instructions
- Heat oil in a wok or pan over medium heat. Add cumin seeds and let them crackle.
- Stir in minced garlic, ginger paste, and curry leaves. Cook until aromatic.
- Push the mixture to the side and scramble the eggs in the same pan. Cook until just set.
- Add the cooked basmati rice, turmeric powder, black pepper, and red chili powder. Mix thoroughly.
- Season with salt and stir-fry on high heat for 3-4 minutes. Add green onions and mix well before serving.
